Am I actually growing up? Finding adulthood in sensible breakfast food.
I am pretty ashamed to admit that until now, at the age of 29, my go-to-breakfast was a good ol’ sugary kids cereal. I’m talking Lidl Chocolate Pillows level of breakfast cereal. Absolute garbage.
This is the year I turn 30, and I’ve been on a kind of all around kick to try and become the most accomplished version of myself, and I’m actually finding it really fun. I’m doing workouts, investing my money sensibly, looking after my skin, and perhaps most rewardingly – eating some decent food for breakfast.
I’ve always been someone who enjoys cooking, and I really care about what I put in my body at every other part of the day, so why breakfast has had this sugary free pass I do not know. But since I’ve made this change, it’s actually wild how different I am feeling.
I have more energy and more brain power, so rather than hitting a wall at around 11am I see myself all the way through to mid afternoon (which also makes me waaaay more productive with work). I also find that my workouts have become easier since I started kicking off my day like this. Most importantly, IT’S SO YUMMY.
So just incase anyone browsing here fancies jazzing up their mornings with some fancy breakfast food – here’s the recipe.

RECIPE
1 Butternut Squash (sliced and roasted in advance and sliced for the week).
1 Egg
1 Spring Onion
Feta
Parsley
Seasoning (salt, pepper, cayenne pepper, garlic granules).
METHOD
1. Fry the butternut squash in a pan for around 1.5 minutes either side.
2. While that’s frying, chop up your spring onion and parsley.
3. When the squash is done, pop it on a plate.
4. Fry your egg (I like this on a high heat so you get the yummy crispy bits underneath).
5. Pop it all on a plate together, sprinkle over your seasoning.
